Back to the Simple Things

After a week in California, eating out, grabbing things on the go, and fine dining by the Tasty F'ing Meals Crew, I was ready to get back in the kitchen and cook a feast!

The first day back we grilled grass fed beef patties and sausage topped with homemade guacamole, and pic de gallo.

For the Veggies - I cut up zucchini, squash and tomatoes and spread them out on a sheet of tin foil, seasoned them with pepper, fresh garlic, and drizzled olive oil. Then I folded the tin foil around the veggies so it made a packet and put them on the grill for 30 minutes. YUM!

Finally! The Pièce de résistance.
I was really wanting something sweet, but wanted it to still be somewhat healthy......
This dessert trumped anything I've ever had before.

Dairy Free Coconut Milk Ice Cream (Coconut Flavor)
Topped with Crushed Pecans, Honey & Grilled Peaches

Ingredients:
Coconut Milk Ice Cream - Coconut Flavor
Pecans
Fresh Peaches
Honey

*Cut up fresh peaches in slices (shape and size doesn't matter) Personally, I like the thinner slices!

*Brush a little honey on the more flat side of the peach and place on the grill. Grill for about 3-5 minutes or until you see the charcoal grill lines on the peach. Flip the slices over and grill until lines appear on the opposite side

*Cut the peach slices into smaller pieces and place on top of the Coconut Flavored Coconut Milk Ice Cream

*Drizzle with honey and chopped pecans

Viola! Fabulousness!
